If stored seed becomes moist and warm, some may begin to germinate or become moldy and contaminated with pathogens. A kitchen freezer is an ideal location for storing seed. If saved and stored under ideal conditions, pepper seed can remain viable for over 25 years. However, pepper seed usually only keeps for 2-5 years.

Pepper seeds are slow to germinate, so we recommend waiting at least a month before giving up on them!

 Generally, you want to use pepper seeds within 2 years, but they can germinate long after that time, too. For example, I have some 10-year-old seeds that I planted a week ago, and I fully expect that some will germinate.  I just planted a lot extra, because I knew the germination rate was going to be low.

Seeds will only go "bad"—in the way that bread gets moldy or milk curdles—if those seeds are exposed to moisture while being improperly stored and begin to develop mold or rot.

Most seed packets recommend starting pepper seeds indoors 8 to 10 weeks before the last average frost date. I time my pepper transplanting for when I know the weather will be warm enough for consistent nighttime temperatures of 50°F. That's usually late May or early June.

To ensure the best results, harvest seeds from ripe, healthy peppers. Simply cut open the pepper and remove the seeds, then rinse them in warm water to remove any pulp. Allow the seeds to dry thoroughly on a paper towel before planting.

Raising seedlings– If the grocery store pepper seeds germinated successfully, plant the sprouts in starting trays using a quality seed starting mix. Peppers require plenty of light, warm temperatures, and moderate soil moisture levels.
